- Extra virgin olive oil: 2 tbsps.
- Medium sized onion: 1 (chopped)
- Garlic cloves: 2 (minced)
- Butternut squash: 1 (large, peeled, seeded and cut in cubes)
- Carrots: 2 (medium, chopped)
- Potato: 1 (medium, cut in cubes)
- Vegetable broth: 4 full cups
- Coconut Milk: 1 cup
- Salt n pepper for taste
Pour oil in a large pot and heat on low-medium heat, add garlic and onion and sauté for 4-5 minutes until tender.
Now add potato, carrot, squash cubes and broth and let the mixture cook for about half an hour (30 minutes) and remove from the flame.
